Apple Cinnamon Muffins ====================== -- From Granny's Muffin House by Susan Ashby, Beverly -- Hills, CA: Royal House Publishing Co., 1983, -- ISBN# 0-930440-18-8 1 1/2 c finely chopped apples, peeled and cored 1 t cinnamon 2 T brown sugar, packed 3 T butter, melted 2 c flour 1 T bakin' powder 1/2 t salt 1/2 c brown sugar, packed 1/4 t cloves (ground) 1 t cinnamon 1 egg, beaten 1 c evaporated milk 1/3 c butter, melted 1/4 c brown sugar, packed 1 t cinnamon 1/4 t ground cloves Mix your apples with the cinnamon, brown sugar, and butter. Cover and steam over low heat for two minutes. Heat oven to 400 deg. F. Sift the next 6 ingredients together. Stir in the egg, milk, and butter, just until blended. Fold in the apple mixture. Combine the remaining ingredients in a separate bowl until crumbly. Fill lined muffin tins full with your batter. Sprinkle crumbly topping over and bake approximately 20 minutes. Makes 12 muffins.
