Apple Day Cake 1 cup vegetable oil 1 tsp baking soda 2 cups sugar 2 cups flour 2 eggs, beaten until foamy 4 cups finely chopped, peeled apples 1 tsp vanilla 1/2 cup chopped nuts and/or raisins (optional) 1/2 Tbl cinnamon confectioner's sugar 1/2 tsp salt 1. Preheat oven to 350 degrees. Grease and dust with sugar a 10 inch bundt pan. 2. Blend oil and sugar; beat in eggs and vanilla. 3. Sift together cinnamon, salt, baking soda and flour; blend the flour mixture into the oil mixture. Stir in apples and nuts/raisins. 4. Bake for 60 to 65 minutes. 5. Cool in pan before unmolding. 6.
